<div>If you are passionate about chocolate making, you will do tempering at least to give smoothness and shine to chocolates because you know these aren&#8217;t the natural attributes of chocolates.  Your tempering converts the chocolates into snappy ones and prevents the formation of whitish-gray spots (which happens when the solids get separated in the cocoa butter).</div>

<div>Cocoa butter is the natural fat of chocolate and about 50% solids remain in it.  <a href="http://www.chocolatetempering.org/">Tempering</a> forces these solids and the cocoa butter crystals to get suspended together. The bonding shifts loose when heating at 90F; the crystals and the solids separate and the former rises to the surface. But during heating, chocolate&#8217;s temper disappears and this permits unwanted blooming and crumbling.</div>

<div>Cocoa butter has a particular trait by which its fatty acids crystallize into six types of crystals which exhibit ascendancy at six different temperatures.  This calls for the prudent maintenance of specific temperatures during tempering.  Only type V of these crystals can give shine and snap to the chocolates.</div>

<div>Chocolate is heated at a temperature of 90F to make it pliant for dipping and molding processes.  This makes re-tempering necessary, and to do that, there are two ways to temper chocolates by hand. </div>
<div>It is from France that we got the first method&#8211;tabliering or marble-slab method&#8211;and here, you cut a pound of chocolate bars into several itty-bitty strips to melt them at a specific temperature.  About half of the melted material is first worked with a rubber spatula to thicken it to a glossy, shiny texture.  The other half is gently worked in until the whole thing obtains a specific temperature, smoothness and shine.  Dipping and molding are carried out after this.  You should keep an eye on maintaining the right temperature because chocolate can solidify quickly.  A calibrated thermometer or a digital laser thermometer is ideal for minding temperatures.</div>

<div>Seeding is a similar process but you use already-tempered chocolate in this method.  You melt only three-quarters of the chocolate and the rest is cut into small strips of 5 mm.  These strips are mixed with the melted chocolate to &#8220;inoculate&#8221; it, thus enabling type V crystals to dominate during crystallization.   </div>

<div>Tempering is a difficult process only due to the need to watch temperatures closely.  Humidity can also make things difficult even for expert chocolate makers during summer.</div>

Actually, your fancy plays against an inexperienced player is more likely to back fire since they won&#8217;t recognize the game on that level. So for these players, you are really better off to make profit by just playing them straight forward.
<p>              Then you have your thinking players. The ones you can get a little tricky on, float on the turn, check raise, or slow play a monster and let them hang themselves. These players are more easily trapped by such play, since they&#8217;re thinking on a different level than the novice. But don&#8217;t be surprised if they play back at you and don&#8217;t fall for all your traps. </p>
<p>              One thing I don&#8217;t advocate is that you make a player upset with you. Say you pulled off a minraise, got reraised, and reraised all-in on a hand that looked like you were making a desperation steal. You take down the pot and your opponent&#8217;s stack. And when you outplay someone like that, it&#8217;s humiliating. But whatever you do, don&#8217;t rub it in. For when you do that, you end up opening yourself up as the target. &#8220;So what&#8221; you say. &#8220;I&#8217;m a better player, let him come for revenge.&#8221; Well that may be true that you&#8217;re a better player, but why make him up his game and make it harder to take his money? It&#8217;s just not economical. </p>
<p>              I was recently reading a column by the Mad Genius Mike Caro and he was speaking of one of the most dangerous &#8220;trick&#8221; plays. If you&#8217;re playing against observant players who expect trickery from you, sometimes playing your hand straight forward can be the most profitable way to play it. The example he gives is from draw <a href="http://www.poker.nl">poker</a>. Say you get dealt 3 of a kind. Most people will discard one card to disguise their trips. But say you discard two and play it straight forward like you have three of a kind. This in and of itself can confuse a seasoned player into thinking you&#8217;re drawing to something else. The best trick to pulling trickshot plays is to keep your opponents guessing whether or not you&#8217;re playing straight forward or playing with trickery. If you can get that level of confusion, then you&#8217;re well on your way to be able to pull off your tricks much more often, and make the pots you take down when playing straight forward that much bigger. Keep this in mind when you play <a href="http://www.everestpoker.com/hu">poker online</a>. </p>
